Simplify board configuration following candlelight example 

- Minimal defconfig like candlelight (only GPIO and CAN)
- Remove SOC and clock configs that are auto-detected
- Change vendor from 'ews' to 'others' like candlelight
- Let Zephyr auto-configure SOC and clock settings
